¿HOW CAN YOU PREPARE A “BANDEJA PAISA”?


Hi people around all the world. Today, I greet you from Medellin-Colombia. I’m accompanied today by two cooks Sara and Daniela. They will teach us, how can we prepare a “Bandeja Paisa”?

¿HOW CAN YOU PREPARE A “BANDEJA PAISA”?



You can prepare a “Bandeja Paisa” after you get the following ingredients:
·         One kilo of beans.
·         One pound of pork hoof.
·         Two green bananas into small pieces.
·         Two slices of beef broth.
·         One carrot into small pieces.
·         Two kilos of red tomato into small pieces.
·         One pound of grated onion.
·         Six stalks of large onion. Ten centimeters each one.
·         Eight tablespoons of oil.
·        -Four cloves of garlic chopped.
·         One loaf of coriander.
·         One kilo of ground beef.
·        Eight sausages.
·         Salt, pepper and cumin to your taste.

These ingredients are to prepare for 8 to 10 portions.

Now, the preparation:

1.    Remember that you have to steep beans in water the day before.
2.    The next day, in the same water cook them in the pressure cooker over medium heat with the hoof, the carrot, the slices of beef broth and the green bananas into small pieces. When the pressure cooker rings, reduce the heat and leave cooking for 30 minutes.
3.    After 30 minutes, add a stew prepared with half of the tomatoes and chop the large onion.
4.    In another pot, cook in oil the other tomatoes, the onions and the garlic cloves.
5.    Finally, add the meat and some water. Stir well until the meat is browned.


Serve beans and meat in a tray accompanied with rice, a chicharron, slices of green bananas, a fried egg, a half of an avocado and an arepa. ¡Nothing else!
